61款幼兒開胃涼伴食譜
菠菜薯仔雞蛋沙律
材料:
日本薯仔(去皮) 375 克
橄欖油 63 毫升
巴斯德雞蛋 3 隻
煙肉(切粒) 2 片
迷你菠菜葉 100 克
白酒醋 1 湯匙
鯷魚 2 片
巴馬芝士粒 1 湯匙
做法:
1. 將薯仔放在大煲中,注入適量的水,煲至軟身,瀝水後切粒。
2. 將雞蛋放在凍水中,大約煲5分鐘至熟,瀝水,將雞蛋放入凍水中,去皮,切角。
3. 將橄欖油、白酒醋及魚片放入小樽中,搖勻。
4. 將煙肉放在鑊中,毋須落油煎至香脆,放在吸油紙上吸去油份。
5. 將煙肉、薯仔、雞蛋、菠菜、汁液、芝士放入碗中,拌勻。
小貼士:
可以用生菜代替菠菜,味道絕不遜色。

Baby Spinach, Potato & Pasteurized Egg Salad
Stuffs :
Japanese potato (peeled) 375 g
olive oil 63 ml
egg 3 pcs
bacon(chopped) 2 pcs
baby spinach leave 100 g
white wine vinegar 1 tbsp
anchovy fillet 2 pcs
grated parmesan cheese 1 tbsp
Method :
1. Cook potatoes in a large pan of boiling water, until just tender; drain and chop coarsely.
2. Meanwhile, cover eggs with water in medium pan; bring to boil. Simmer, uncovered, 5 minutes; drain. Rinse eggs under cold water; peel and quarter.
3. Mix oil, vinegar, fillets in small bottle, shake well.
4. Cook bacon in a large pan headed without oil until crisp; drain on absorbent paper.
5. Gently toss bacon in large bowl with potatoes, eggs, spinach, sauces and cheese.
